San Luis Potosí is a region of diverse landscapes and great biodiversity, a place where land and life intertwine. Deserts contrast with lush valleys and forests, dotted with beautiful waterfalls. It has a convenient location in Mexico, halfway between the country’s three largest cities.
It was an area populated in pre-Hispanic times by the Pame and Otomí cultures.
Huasteca and Potosina enchiladas, bocolitos, estrujadas, bean tamales, borracho stew, Huasteca broth, and the famous zacahuil. You'll also find nopales with wild potatoes mixed with hearts of palm, asado de boda (wedding roast), Potosina fiambre (stolen meat), and goat al pastor (shepherd's goat).
